Ingredients
- 4 buckwheat pancakes
- White ham chiffonade
- Fresh goat cheese (in this case bûche cendrée)
- 2 zucchinis
- Olive oil
- Lemon juice
- Salt, pepper, dried basil
- 2 red onions
- 50g sugar
- 100g white vinegar
- 150g water
- Toasted pine nuts
Recipe steps
- Prepare the pickled onions in a jar: place the sliced onions in the jar, add the boiling sugar/vinegar/water mixture, seal and chill for at least 2 hours.
- Using a vegetable peeler, cut zucchini into strips, season with olive oil, lemon juice, a little salt, pepper and dried basil. Set aside in a cool place.
- Heat the patties in a frying pan with a little salted butter, then fold them into a rectangle to form a kind of tartine.
- Now it’s time to dress the galette: first place the ham chiffonade in the center along the entire length of the galette. Then place a few slices of marinated zucchini, interspersed with pieces of fresh goat’s cheese. Top with a few pickled onions and finish with a few toasted pine nuts. Serve with a small green salad, and you’re ready to go!
