At the Bistrot de Madeleine, the madeleine isn’t just a sweet little cake: it’s a symbol. It’s a symbol of remembrance, of being passed on, and of the simple sweetness we like to share as a family. It’s a nod to Madeleine, Benjamin’s great-grandmother, and to the idea of a taste experience that transcends time.

Recipe for 12 people
Preparation time: 30 min
Cooking time: 6 min

Ingredients

  • 40 g brown sugar
  • 130 g sugar
  • 2 g salt
  • 4 eggs
  • 180g flour
  • 180g butter
  • 20 g honey
  • 8 g baking powder

Recipe steps

  1. In the bowl of a food processor (such as a Kitchenaid), beat the eggs and sugar until frothy.
  2. Add the flour, then the melted butter and honey.
  3. Add the yeast and mix gently.
  4. Leave the dough to rest in the fridge for 1 hour.
  5. Put around 22g of pastry per mould into a buttered madeleine tin.
  6. Bake at 180°C for 6 minutes, until the edges are golden and the centre is soft.
